How do you know if your baking powder is still good?
You can test the freshness of baking powder by simply adding two tablespoons of baking powder to a cup of hot water. If the water foams, the baking powder is still useable.

I didn't know about this for years, either. :) I learned the hard way while in the middle of baking. Ugh.

I really do need to do this, I read that it's usually only good for about 6 months. But my muffins still keep a-risin' so maybe I'm okay...
